This is the recipe used on The Star Wars Mom's Princess Leia Cinnamon Buns.

Before you even ask, how is this Italian, let me just say that if one so chooses to use Mascarpone in the frosting that dubs it Italian! Now that we have that resolved, let us move on. Tomorrow is Epiphany. The kids have made La Befana's Sailor Jerry Rum Cake to leave out for the kind, old lady. I am pretty sure La Befana is a very sweet old lady, who used to have an issue with procrastination, until she started goal setting and using a daily planner.

My kids are also making Befanini Cookies for tomorrow. But for breakfast they will wake up to Italian Cinnamon Rolls which are made from Potato Bread Dough.

Now I must confess, quite some time ago, I promised to share this recipe with my sweet friend, Holly. I have failed her in taking the time to write it out, you might say I procrastinated. But a post is a great way to get my hiney in gear when I am slacking since it helps also meet a goal. So here is the recipe that my family loves for cinnamon rolls. And I hope that Holly will be pleasantly surprised that her flaky friend finally came through with the goods! :)

By the way, I have adapted a recipe called Colleen's Potato Crescent Rolls for this recipe I use to make Italian Cinnamon Rolls. I prefer to used instant mashed potatoes in this, because real potatoes are unpredictable as to how smooth you can get them. While that is fine for most potato dishes, one night when I was making potato rolls for Thanksgiving dinner the next day, I spent HOURS squeezing the potato lumps smooth in my dough, to the point of crying. Never again.

Star Wars Italian Food:
Princess Leia Cinnamon Buns
aka Italian Cinnamon Potato Rolls Recipe
(makes 2 dozen cinnamon rolls)

Ingredients:

Bread Dough:
Instant Mashed Potatoes and hot water to make 1 cup of prepared mashed potatoes
1 package Active Dry Yeast or equivalent
3/4 cup whole milk, warm
3/4 cup water, warm
2/3 cup white sugar
2/3 cup salted butter
2 eggs
1/2 tsp salt
6 1/2 cups bread flour or all purpose flour

Filling:
1 cup salted butter
1 cup brown sugar
2 cups cinnamon and sugar (Add enough cinnamon to white sugar to your desired taste) 

Icing:
1/4 cup salted butter, room temp
1 8 oz container of Mascarpone or a package of cream cheese, room temp
1+ teaspoon vanilla extract
1/2 teaspoon cinnamon
3 cups powdered/confectioner's sugar
2+ Tablespoons heavy whipping cream or whole milk


Directions:

  1. In a large bowl, mix milk, water, and sugar for dough. Add yeast, stir and let sit until foamy, about 10 minutes. This is proofing the yeast. If it doesn't foam, you might have killed it or have bad yeast.
  2. After yeast is frothy, mix in 1 cup mashed potatoes, butter, eggs, salt, and 3 cups flour. Stir in the remaining flour, 1/2 cup at a time, until dough has become stiff but still pliable. Turn dough out onto a lightly floured surface, and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with plastic wrap, and either let rise immediately or refrigerate up to 24 hours. Once it is doubled move onto the next step.
  3. Remove the dough from the bowl and  divide the dough into two equal pieces, and form into rectangles on a floured surface. Roll out each piece of dough into a large rectangle. Take 1/2 cup softened butter per a rectangle and cover to outside edges. Sprinkle each rectangle with 1/2 cup of brown sugar and 1 cup of cinnamon and sugar. Even it out. Start rolling one wide end to the other wide end of the rectangle. Close up the ends. You can scrunch the roll of dough a bit toward the middle to make the roll even in width if needed. Cut in the middle. Then cut each of the two piece in the middle. Then take each of the four pieces and cut into thirds and you will now have 12 cinnamon rolls out of each rectangle. Place on them on parchment paper covered baking sheets with the swirl sides up. Cover, and let rise for 1 hour. Meanwhile, preheat oven to 375 degrees F.
  4. Bake in preheated oven for 15-20 minutes, or until golden brown.
  5. Mix all icing ingredients until smooth and the consistency you want for your glaze (adding or subtracting powdered sugar and cream/milk). Smooth on top of the cinnamon rolls while they are warm. Most people enjoy them best when they are warm, but they stay soft for up to 24 hours if kept in an airtight container after cooled.

You know what my kids and I enjoy most about this blog? All the wonderful Italian or Italian-American products we are blessed to taste-test or try out. Chef Bretto has a fondness for sampling food/ingredients and dreaming up his next creation in our kitchen culinary studio.

Today's review is for BelGioioso Award-Winning, Italian-American Cheeses. It won't be complete for at least another week, as we keep trying out the cheeses in various dishes. However, I can tell you, we have immensely enjoyed all the cheeses. They are fantastico! Perfect creaminess, texture, and flavors as they should be.

Let's get this ball of mozzarella rolling. We have on the sampling block:

Mascarpone - Fresh, soft cheese with a sweet, creamy flavor. Think of it as the more delizioso version of cream cheese. BelGioioso was the first American company to manufacture this Italian specialty cheese over here. I use it in my Amaretto Boston Cream Tiramisu recipe.

Ricotta con Latte - Soft, fresh cheese with a creamy, mild and clean flavor. Some Americans try to substitute cottage cheese for this, but it never works in my book. They simply don't compare in texture or flavor. We use ricotta in our lasagna and cannolis.

Pecorino Romano - Hard cheese with a robust flavor. I have come to lust for this cheese in most dishes where I had traditionally used Parmigiano (Parmesan). If I am going to grate Parmesan into the sauce, then I will grate Romano as well. Because it is sharper, it does not require as much as if one tried to flavor a sauce with only Parmesan.

Parmesan - Hard table cheese with a full, nutty flavor. In Italian-American restaurants, this is the cheese the chef brings out and grates freshly onto your meal (Italians do not use it in this manner traditionally). I use it in almost any Italian dish which incorporates cheese, which includes my meatballs, lasagna, spaghetti sauce, alfedo sauce, pizza, etc.

Pizza Blend - Savory combination of mild and sharp, robust flavors. This is a specialty mix of Romano, Fontina, and Provolone (mild). I love adding this to my pizzas. Mozzarella and Parmesan were my old standbys. Then one day, Giada went on about loving Fontina on top of pizza. And the rest is history! I believe this combo sprinkled on top of whole milk Mozzarella and Parmesan make for the most delectable flavored cheesy pizza.

Fresh Mozzarella - Soft cheese with a delicate, milky flavor. When I eat a sandwich, I do not want the cheese to overpower my meat and I like it to be soft and enhance my flavor sensation. This cheese is perfect for my very favorite sandwich in the world: Panino alla Margherita (Mozzarella, Tomato, and Basil). I even added some to my uncured Niman Ranch Pastrami sandwich and found it to be another pairing I like very much. Of course Mozzarella is used in many of my recipes as well. And it is one of those cheeses, that is so enjoyable to just snack on by itself, anytime. Because it is not an intense flavor, it works even in the morning.

Of course I am hoping to try more of their cheeses in my cooking soon. But I have to tell you that I am so grateful that BelGioioso has made enjoying Italian cheese and my cooking adventures affordable and convenient.

If I could request a cheese from them, it would be that they would produce Smoked Ricotta. As it is, I have to make my own from their Ricotta. They make Ricotta Salata, which would be of the same texture, but not the same flavor.

This coming week, as I post some of the recipes we used with the BelGioioso cheeses, I will add them to this page, as well.

In April, Stockton, California holds their annual Asparagus Festival, "Best of the West Food Fest!"  While asparagus is a significant crop in California's Sacramento-San Joaquin River Delta region, it also reigns as a favorite vegetable in many regions of our planet, dating back to 3000 BC are  pictures of it from an Egyptian frieze.

Spring is around the corner bringing the asparagus season with it. I thought I might whet your appetite. The following recipe can be implemented as is, or several flavor variations and even some ideas at the end on substitutes that work on a budget. This is a lovely dish for appetizers or entertaining. It looks simply elegant.

Ingredients:

  • 8 ounces of Prosciutto, sliced
  • 8 ounces of Mascarpone, softened
  • 18 spears of Asparagus
  • Extra Virgin Olive Oil, to drizzle or spray

Directions:

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

First, blanch the asparagus spears for one minute and then immediately dip in an icy cold water bath. Drain. This gives a BEAUTIFUL green color to your spears.

Next, take a slice of prosciutto and spread with mascarpone cheese. Place a bundle of 3 spears on the prosciutto and starting towards the bottom or the asparagus, spiral the prosciutto up the bundles. Arrange bundles on baking sheet in a single layer.

Spray or drizzle bundles with olive oil. Put in top third of the oven and bake for 10-20 minutes until the Asparagus is fork tender and the prosciutto is golden. You do not want to over bake or you will have mushy asparagus.

Variations:
*Flavor your mascapone with garlic, onion, or chives. Salt and pepper the asparagus before rolling.
*Budget variations: Use black forest ham or thin sliced bacon (partially cooked) instead of prosciutto. Use cream cheese instead of mascarpone.

 I would stoke the red coals in our fireplace to lessen the goose bumps forming on my pale arms, if only we had a fire burning. During the chilly months of winter, I often find myself staring into our frostbitten backyard, reminiscing about the seasonal tastes of summer. Two items my organic garden provides are luscious, juicy, sweet tomatoes and the invigorating scent of sweet basil. I could enjoy these ingredients daily in my menu, when they are at the height of pleasurable taste.

On the other hand, store bought tomatoes during winter lack sweetness, they are simply acidic. They look like a tomato, but the flavor difference is extremely discernible. My body yearns for comfort foods during the winter, but craves the enticement of summer’s best garden selections. I have become the embodiment of Dante’s Divine Comedy…bouncing back and forth between extremes. I desire both the Inferno and Paradiso in my meal! Having a family that requires “friendly” food balances my vacillating scales.

Caring for a large family, I frequently construct hefty casseroles. Earlier this fall, my recipe, "Itsa Gooda Italiano Ricotta Gnocchi” became the “#1 Fall Comfort Food” by the Channel 10 News (ABC) viewers’ votes in the Sacramento region, as well as the votes from my family and friends. The delight was mine, as the prize was one I could not afford on our budget, a Le Creuset French Oven. This is ideal for my family size (with or without company) and my approach to cooking. Every time I use this Dutch/French/Italian Oven my mind slips back in time, evoking sweet recollections with my friends. My camaraderie pot infuses prayers of gratitude as they lift to the heavens.

I realized that I had not yet shared my trophy with you, cari miei lettori! Thus, combining my French Oven with the warm flavors of summer, I developed a Cheesy Basil Baked Tortellini Casserole. The Mascarpone cheese gives winter’s tomatoes the sweetness of summer. The basil adds its superb minty-clove zesty goodness. All the lovely pasta and cheese just fill the body with soothing warmth through the wintry night. To make it easier you can add the Basil to the mixture before you start baking, it will just lose a tad bit of its flavor, but may be worth the time you will save. You can half this recipe for a smaller family. Enjoy!

Cheesy Basil Baked Tortellini Recipe

Ingredients:

  • Extra Virgin Olive Oil
  • 2 cloves minced garlic
  • ½ onion, finely chopped
  • Red Pepper, flakes or powder
  • 2 Jars Marinara or 5 cups of homemade marinara/ragu sauce
  • 8 ounces Mascarpone Cheese
  • ½ cup Italian Flat-Leaf Parsley, finely chopped
  • 2 lbs Three Cheese Tortellini (Buitoni brand is delicious) or any other flavored Tortellini you prefer
  • 1 cup Sweet Basil, covered in Olive oil, chopped or leaves rolled and sliced thinly
  • 4 ounces Mozzarella, grated or thinly sliced
  • 4 ounces Fontina, grated or thinly sliced (if you don’t have this…just use more Mozzarella)
  • Parmigiano-Reggiano , Parmesan, or a mixture of Parmesan and Romano, grated

Directions:

Preheat the oven to 350 degrees Fahrenheit.

First, if your tortellini needs to be boiled to prepare, boil water, generously salted, in a stockpot. (Remember dried pasta is to be boiled in water that is salty like the ocean.)

Mix the marinara with the Mascarpone cheese and Italian Parsley until well blended. The Mascarpone sweetens and makes creamy the Marinara. 

Heat olive oil in French/Dutch oven or a large, heavy flameproof casserole dish* (*see below for other option) on the stove top via medium heat until oil lightly ripples (famous chef, Joanne Weir, taught me to use this technique in her Cooking Class DVDs to know if the oil is ready). Add the onion, garlic, and some red pepper. Sauté for one minute until the aroma escalates. Pour in the Marinara and Mascarpone mixture and combine.

When tortellini is al dente, drain and add to French/Dutch oven. Stir ingredients. Cover French/Dutch Oven with lid and using pot holders, place in hot oven and bake for 25 minutes. Meanwhile coat Basil in olive oil, roll it up and slice thinly or chop.  The Olive oil will help the leaves not turn black when being exposed to oxidation or while baking.

After 25 minutes, remove lid, stir the fresh basil into the tortellini mixture. Combine the Mozzarella and Fontina and sprinkle on top. Then lightly dust the top with Parmigiano-Reggiano. Place under broiler (not too hot so as not to ruin your dutch oven) just until cheese melts and turns lightly golden. Serve warm or hot with a side of fresh salad!

* If you do not have a French/Dutch oven, or a flameproof casserole dish, my next suggestion would be to prepare the ingredients in a stove top safe pan and then transfer the mixture to a large ovenproof pan before baking/broiling.

Using pumpkins in Italian Cooking tends to be from the Emilia-Romagna area of Italy, just north of Tuscany. As the Harvest season approaches, warm spices, apples, and/or pumpkin makes this season come alive with the scents of autumn! Remember frolicking through the pumpkin patch as a child? This embodies that very spirit.

I have been presenting these Pumpkin Bars to family and friends since I was a teenager. The flavor increases through refrigeration with each speck of spice blending beautifully with the flavorful pumpkin. This is a recipe adapted for easier baking in an American kitchen.

If you are using these for the party food, Star Wars Rebels Sabine's Starbird Bars, just bake as bars and then get the template via The Star Wars Mom page and add orange sugar instead of candy pumpkins on top.

 Pumpkin Bars or Cupcakes with Cinnamon Mascarpone / Cream Cheese Frosting Recipe

Ingredients: 

  • 1 can of Pumpkin Puree (15-16 oz) 
  • 1 Tablespoon or more of Pumpkin Pie Spice (or 1 tsp each cinnamon, cloves, and ginger)
  • 1 Package of Yellow Cake Mix
  • 1 teaspoon of vanilla extract.
  • ¼ cup of  melted butter
  • 2 eggs
 Frosting Ingredients:  
  • 1/4 cup of salted butter at room temperature 
  • 1/2 package of Mascarpone or Cream Cheese, 8 oz, at room temperature 
  • 1 teaspoon of Vanilla Extract 
  • 1 Tablespoon of Cinnamon 
  • 2-3 cups of Confectioner’s Sugar or Powdered Sugar 
  • Heavy Whipping Cream or Milk to bring to correct consistency

Directions:

Preheat oven to 350 degrees. Place parchment paper or grease and flour 15X10 Jelly Roll Pan for bars or place cupcake papers in muffin tins for cupcakes.  

Put all the Cupcake/Bar ingredients in a mixer and beat until smooth. It will be thick. Pour batter into pan or scoop it into the cupcake tins. If making bars, use a rubber spatula to spread it to the corners and even it out some. *Tip: When spreading never just quit your motion and pull-up the spatula or else the batter may pull-up the grease and flour from the bottom of the pan. Instead, as you are spreading slowly rotate the spatula from horizontal to vertical as you come up with it.
  
The times for baking vary and seem to depend in part on how much liquid is in the pumpkin. I check it after 15-20 minutes. It will turn golden and should feel firm with a touch of spring in the center when finished. Remove from the oven and cool on a wire rack.
  
To make the frosting, first cream the butter and mascarpone or cream cheese together. Add the vanilla and cinnamon next. Finally start beating in the confectioner’s sugar on low speed. Once all the sugar blends, add 1 Tablespoon or more of heavy cream or milk to get it to the consistency needed. Set the blender on a higher speed until frosting is a bit fluffy. 2 cups of Confectioner’s sugar works well for spreading, 3 cups for squeezing out of a decorating tube. I usually add a pumpkin candy or candy corn on top of each bar or cupcake for décor! Eat as is or refrigerate before serving.
